mx Vegetarian Enchiladas - We know how much all Mexican food lovers, enjoy an easy enchilada recipe, so we made these vegetarian ones as delicious and easy as possible. Made with all the traditional Mexican ingredients, we used a blend of tofu and pureed beans instead of meat, for this very satisfying vegetarian enchilalda recipe.

Prep Time: 10 mins
Cook Time: 35-40 mins
Main Ingredient: Beans, Tofu
Difficulty Level: 2

Ingredients to make Vegetarian Enchiladas

1 c Slightly pureed Beans,(pinto, red kidney, chickpeas)
1/2 c Cooked rice
1/2 c Tofu, excess water removed
1/4 c Chopped bell pepper
1/4 c Chopped green onion
1 c Grated cheddar
1 c Grated Monterey Jack
10 oz Enchilada sauce
10 Corn tortillas

Directions to make Vegetarian Enchiladas

Step 1:1 c Slightly pureed Anasazi Beans *.
Step 2:Fill tortilla with mixture and roll. Place in greased 6 1/2 inch X 10 1/2 inch pan with the opening of the roll down. Any remaining sauce should be poured on top of the enchiladas once the pan is filled. Place cheeses on top and bake at 300 degrees F for 35-40 minutes.
